  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 cups grated zucchini
  • 4 oz cream cheese (softened to room temperature)
  • 1/4 cup butter (very soft)
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, cream together softened butter, sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract.
