  • 2 large red bell peppers Sweetness and color enhance the sauce.
  • 3 cloves garlic Fresh minced garlic adds depth of flavor.
  • 2 tbsp olive oil Essential for roasting and sautéing.

  • to taste salt To season the fish and sauce perfectly.
  • to taste pepper To season the fish and sauce perfectly.

Method

  1. Preheat your oven to 400°F (200°C).
  2. Slice the red bell peppers into strips and toss them with olive oil, salt, and pepper. Spread the seasoned peppers on a baking sheet in a single layer, ensuring they roast evenly. Bake for about 20 minutes until they are softened and have developed some charred edges.
  3. Once roasted, transfer the bell peppers into a blender or food processor along with the garlic cloves and freshly squeezed lemon juice. Blend until smooth to create a rich, smoky sauce.
  4. In an oiled skillet over medium heat, cook each tilapia fillet for about 3-4 minutes on each side until golden brown and flaky.
  5. After cooking the tilapia, pour the vibrant roasted pepper sauce over the fish in the skillet. Allow it to simmer for another minute before serving.
  6. Plate your tilapia warm, drizzled with extra roasted pepper sauce if desired. Garnish as needed, then enjoy.
