Ingredients

  • 8 oz flat rice noodles Choose wide rice noodles for the best texture.
  • 2 tbsp vegetable oil Use high smoke point oil for stir-frying.
  • 4 cloves garlic minced, adds fantastic flavor.
  • 3 tbsp low-sodium soy sauce Enhances the umami without too much salt.
  • 1 tbsp brown sugar Balances the savory notes perfectly.
  • 1 cup bell peppers sliced, adds color and crunch to the dish.
  • 1 cup broccoli florets A nutritious addition that pairs well with noodles.
  • 1 cup carrots julienned, provides sweetness and a vibrant look.
  • 8 oz boneless chicken or shrimp Choose your favorite protein to make it hearty.

Method

  1. Boil water in a large pot and cook flat rice noodles according to package instructions until al dente. Drain the noodles and set them aside for later use.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering, ensuring it is hot enough for stir-frying.
  3. Add minced garlic to the skillet and sauté for about one minute until fragrant, allowing its aroma to permeate the oil.
  4. Introduce the protein of your choice (chicken or shrimp) into the skillet and stir-fry until cooked through—approximately three to five minutes for chicken or two to three minutes for shrimp.
  5. Toss in sliced bell peppers, broccoli florets, and julienned carrots; stir-fry for another two minutes until they are slightly tender yet still crisp.
  6. Add the cooked noodles back into the skillet along with soy sauce and brown sugar. Toss everything together thoroughly until well combined and heated through.
