Ingredients

  • 28 oz Tuttorosso Crushed Tomatoes A flavorful base for the sauce.
  • 3 tbsp Olive Oil Adds richness to the sauce.
  • 3 cloves Garlic For aromatic depth in the sauce.
  • 1-2 Calabrian Chiles Optional, adds heat to the sauce.
  • 1 ½ tsp Kosher Salt Enhances flavor throughout the dish.
  • 1 tsp Sugar Balances acidity in the sauce.
  • 8 oz Fresh Baby Spinach Provides essential nutrients and greens.
  • 15 oz Ricotta Cheese Creamy filling that binds the flavors together.
  • 1 cup Shredded Mozzarella Cheese Adds gooey texture when baked.
  • ½ cup Grated Parmesan Cheese For a savory finish in the filling.
  • 2 Large Eggs Helps bind the filling ingredients together.
  • ½ tsp Black Pepper For seasoning to taste.
  • ¼ tsp Nutmeg Optional, adds warmth to the filling.
  • 12 Lasagna Noodles The main structure of our pinwheels.

Method

  1. In a medium pot, combine Tuttorosso Crushed Tomatoes, chopped garlic, olive oil, Calabrian chiles (if using), kosher salt, and sugar. Bring this mixture to a rapid simmer over medium-high heat before reducing it to low to simmer for about 10 minutes, stirring often until thickened slightly.
  2. Place fresh baby spinach in a large bowl and sprinkle with kosher salt, scrunching it with your hands for about one minute until wilted. Allow it to sit for five minutes before squeezing out excess liquid and breaking it into smaller pieces.
  3. Incorporate ricotta cheese, shredded mozzarella, grated Parmesan cheese, eggs, remaining salt, black pepper, and nutmeg into the wilted spinach bowl. Stir this mixture until well combined then refrigerate until needed.
  4. Bring a large pot of salted water to a boil and cook lasagna noodles one minute shy of al dente according to package instructions. Drain them carefully before running under cold water and drizzling with oil to prevent sticking.
  5. Prepare your baking dish by spreading some of your reserved tomato sauce at the bottom before layering on your rolled pinwheels filled with that creamy spinach mixture!
