Ingredients

  • 1 and 2/3 cups graham cracker crumbs Perfect base for the bars’ crust.
  • 1/2 cup butter Adds richness and binds the crust together.
  • 2 tablespoons sugar A touch of sweetness to enhance the flavor.
  • 3 cups sweetened flaked coconut Provides chewiness and tropical flair.
  • 14 oz can sweetened condensed milk Creates a luscious texture in each bite.
  • 1 cup seedless raspberry preserves Brings tartness and fruity goodness.
  • 1/2 cup chopped pecans Adds crunch and nuttiness to the mix.
  • 1/2 cup semisweet chocolate chips For added richness and decadence.
  • 1/3 cup white baking chips Offers a creamy contrast to the chocolate.
  • 1 teaspoon shortening Helps achieve a smooth melt for the chocolate chips.

Method

  1. Prepare the Crust: Begin by crushing 15 oz of shortbread cookies until they resemble sandy crumbs. Blend them with melted butter until well combined, then press this mixture firmly into a lined baking pan to form a solid base for your bars.
  2. Add Raspberry Preserves: Next, spread the seedless raspberry jam evenly over the crust, ensuring it reaches all edges for maximum flavor in every bite.
  3. Pour the Condensed Milk Mixture: Pour sweetened condensed milk evenly over the jam layer, swirling it gently with a spatula for an even distribution that enhances both taste and texture.
  4. Layer with Coconut and Nuts: Sprinkle shredded coconut and chopped pecans on top of the condensed milk mixture, pressing down slightly so they adhere well.
  5. Top with Chocolate Chips: Scatter semisweet chocolate chips and white baking chips on top of your layered ingredients, reserving some white chips for later if desired.
  6. Bake and Cool: Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes until golden brown and aromatic. Allow the bars to cool in the pan before cutting them into squares to set flavors perfectly.
