Ingredients

  • 2 pounds ground beef Choose lean ground beef for a juicier meatloaf.
  • 1 cup breadcrumbs Use plain breadcrumbs for better flavor absorption.
  • 1 large egg Acts as a binder to hold the meatloaf together.
  • ½ cup milk Adds moisture and richness.
  • 1 tablespoon Worcestershire sauce Enhances depth of flavor with its tangy notes.
  • 1 teaspoon garlic powder Provides aromatic flavor throughout the meat mixture.
  • 1 teaspoon salt Essential for seasoning the meat evenly.
  • ½ teaspoon black pepper For a mild kick of spice in each bite.
  • 1 green bell pepper diced Adds freshness and texture to the filling.
  • 1 small onion Sweetness from sautéing balances the savory ingredients.
  • 1 tablespoon olive oil Used for sautéing vegetables until tender.
  • 8 slices provolone cheese 4 for filling, 4 for topping; melts beautifully.
  • 1 tablespoon fresh parsley Optional garnish that adds color and brightness.

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté diced green bell pepper and onion for about 5 minutes until they are softened and fragrant. Set them aside after cooking.
  3. In a large bowl, mix together ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and black pepper until well combined.
  4. Press half of the meat mixture into the bottom of a loaf pan before layering with four slices of provolone cheese followed by the sautéed peppers and onions.
  5. Top with the remaining meat mixture and press down firmly to seal all edges before baking it in the preheated oven.
  6. Bake for 45-50 minutes; during the last five minutes of baking time, place four more slices of provolone cheese on top so they melt into gooey perfection.
