Ingredients

Pasta and Sausage
  • 12 oz penne pasta
  • 1 lb Italian sausage casings removed
  • 1 tbsp olive oil for cooking
Vegetables
  • 4 cups fresh spinach
  • 1 small onion diced
  • 3 cloves garlic minced
Creamy Sauce
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method

Cook the Sausage
  1. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.
Sauté Vegetables
  1. Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
Add Pasta and Broth
  1. Stir in the penne pasta and chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10 minutes, or until the pasta is al dente.
Make it Creamy
  1. Once the pasta is cooked, stir in the heavy cream, parmesan cheese, Italian seasoning, salt, and pepper. Mix well until the cheese is melted and the sauce is creamy.
Add Spinach
  1. Fold in the fresh spinach and cook for an additional 2-3 minutes until wilted.
Serve
  1. Serve hot, garnished with extra parmesan cheese if desired.

For a lighter version, you can substitute turkey sausage and use half-and-half instead of heavy cream.
