Ingredients

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon salt to season chicken
  • 1/2 teaspoon black pepper to season chicken
Orzo and Pesto
  • 1 cup orzo pasta uncooked
  • 2 cups chicken broth low sodium
  • 1/2 cup pesto sauce store-bought or homemade
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup parmesan cheese grated, for serving
Garnish
  • 1/4 cup fresh basil chopped, for garnish

Method

Cook Chicken
  1. In a large skillet over medium heat, add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
Add Orzo and Broth

Serve
  1. Remove from heat, garnish with fresh basil and parmesan cheese. Serve warm.
