Ingredients

Main Ingredients
  • 1 lb Italian sausage casings removed
  • 1 pkg gnocchi about 16 oz
  • 1 cup chicken broth low-sodium
  • 1 can diced tomatoes 14.5 oz
  • 2 cups fresh spinach washed and chopped
  • 1 cup shredded mozzarella cheese for topping
  • 2 tbsp olive oil for cooking
  • 1 tsp Italian seasoning
  • 1 clove garlic minced

Method

Cook the Sausage
  1. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Add the minced garlic and Italian seasoning, cooking for an additional 1-2 minutes until fragrant.
Add Gnocchi and Sauce
  1. Stir in the chicken broth and diced tomatoes (with juices). Bring to a simmer.
  2. Add the gnocchi and cook according to package instructions, usually about 3-5 minutes, until they float to the top.
Finish with Spinach and Cheese
  1. Once the gnocchi is cooked, stir in the fresh spinach and cook until wilted, about 2 minutes.
  2. Remove from heat and sprinkle shredded mozzarella cheese on top. Cover the skillet for a few minutes to let the cheese melt.
Serve
  1. Serve hot, garnished with additional Italian seasoning if desired.
