Ingredients

  • 4 fillets salmon (4-6 ounce)
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice (jasmine or basmati)
  • 1 avocado (sliced)
  • 1 cucumber (sliced)
  • 1 cup cooked edamame

Equipment

  • Non-stick skillet
  • Large bowl

Method

  1. Cut salmon into 1-inch cubes. In a large bowl, whisk together soy sauce (or tamari), honey, sriracha, minced garlic, and water.
  2. Add salmon cubes to the marinade, ensuring they are well-coated. Cover and let marinate for at least 20 minutes.
  3. Heat a non-stick skillet over medium-high heat with oil. Add marinated salmon cubes without overcrowding and cook for about 2–3 minutes per side until golden brown.
  4. Pour reserved marinade into the skillet once the salmon is cooked; simmer until thickened.
  5. Assemble bowls by placing rice at the base, topping with salmon, avocado slices, cucumber, and edamame.
  6. Drizzle with sriracha mayo and garnish as desired.
