Ingredients

  • 1 english cucumber Use fresh for the best crunch.
  • 8 ounces medium pasta Choose penne or rotini for great texture.
  • 1/2 sweet white onion Adds a mild sweetness to the dish.
  • 1/2 cup sour cream Provides creaminess and tanginess.
  • 1/2 cup mayonnaise Balances the flavors and adds richness.
  • 1 teaspoon sugar Enhances the overall taste of the salad.
  • 1/2 teaspoon salt Essential for bringing out all the flavors.
  • 2 tablespoons fresh dill, chopped A fragrant herb that brightens the dish.
  • 2 tablespoons vinegar Adds acidity to cut through the richness.
  • black pepper To taste, for a little extra spice.

Method

  1. Begin by boiling water in a large pot and adding a pinch of salt. Once boiling, add your medium pasta of choice and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool down the pasta.
  2. While the pasta cooks, wash your english cucumber and sweet white onion thoroughly. Slice the cucumber thinly and chop the onion finely for even distribution throughout the salad.
  3. In a mixing bowl, combine sour cream, mayonnaise, sugar, salt, fresh dill, vinegar, and black pepper. Whisk until smooth and well blended to ensure every bite is packed with flavor.
  4. In a large bowl, combine the cooled pasta with sliced cucumber and chopped onion. Pour in your dressing mixture and gently toss everything together until evenly coated.
  5. Cover your salad with plastic wrap or transfer it to an airtight container and refrigerate for at least 30 minutes before serving. This allows all those wonderful flavors to meld together beautifully.
  6. Once chilled, give your salad one final stir and serve it cold as a delightful side dish or light main course on warm summer nights!
