Method

  1. Prepare the Ingredients: Start by gathering all your ingredients together on the counter so you won’t miss anything during cooking time. Chop the onion and garlic finely while rinsing the beans under cold water in a colander until clean.
  2. Add Ingredients to Crockpot: Place your boneless chicken breasts at the bottom of the crockpot followed by chopped onions, garlic, chicken broth, drained beans, diced green chilies, corn, salt, pepper, cumin, oregano, chili powder, and cayenne pepper if using.
  3. Cook on Low Heat: Cover your crockpot with its lid securely in place before setting it on low heat for about three hours or until the chicken is cooked through and tender enough to shred with forks easily.
  4. Shred Chicken & Add Cream Ingredients: Once cooked, carefully remove the chicken from the pot using tongs or a slotted spoon before shredding it with two forks; return shredded chicken back into the pot along with softened cream cheese and half-and-half cream stirring gently until combined.
  5. Final Touches & Serve: Taste test your soup adjusting seasonings if necessary while adding freshly chopped cilantro just before serving! Ladle into bowls topping them off with sliced jalapeños, avocado chunks, dollops of sour cream, tortilla strips, grated cheese, or more cilantro as desired.
