Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 8 oz cream cheese softened
  • 1 cup shredded pepper jack cheese
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1/2 cup cooked bacon (crumbled, about 6 slices)
  • 1/2 cup chicken broth (optional, for slow cooker)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions (chopped, for garnish)

Method

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts in your slow cooker or skillet. Sprinkle ranch seasoning, garlic powder, onion powder, and black pepper over the chicken evenly. If using a slow cooker, add chicken broth.
  2. Add Cream Cheese: Dollop softened cream cheese directly onto the seasoned chicken breasts.
  3. Cook the Chicken: Cover your slow cooker and cook on low for 4-5 hours or high for 2-3 hours until the chicken is tender and fully cooked through.
  4. Shred the Chicken: Remove the chicken from your slow cooker or skillet and shred it into bite-sized pieces. Return the shredded chicken back into the cooker or skillet along with all remaining juices.
  5. Add Cheese and Bacon: Incorporate shredded pepper jack cheese and crumbled bacon into your mixture while stirring gently until well combined.
  6. Serve: Garnish your Easy Pepper Jack Crack Chicken with chopped green onions before serving hot.
