  • 10 large eggs Use large eggs for best results.
  • 1/2 cup mayonnaise Choose a creamy variety for rich flavor.
  • 1 tablespoon Dijon mustard Adds tanginess to the filling.
  • 1 teaspoon hot sauce For a little kick that's adjustable to taste.
  • 2 teaspoons smoked paprika Gives depth and color to the eggs.
  • 1 teaspoon cayenne pepper Adds heat—feel free to reduce if you're sensitive to spice.
  • 1 teaspoon dried oregano Provides a hint of herbal flavor.
  • 1 teaspoon garlic powder Enhances the overall savory profile.
  • 1 teaspoon onion powder Complements the garlic and adds sweetness.
  • 1/4 teaspoon granulated sugar Optional, balances flavors if desired.
  • 20 medium shrimp Peeled and deveined.
  • 2 tablespoons olive oil For cooking the shrimp perfectly.
  • 1 jalapeño Thinly sliced, adds crunch and more heat as a garnish.
  • 2 tablespoons chopped fresh chives For vibrant color and freshness on top.
  • lemon wedges For serving, squeeze over before enjoying for brightness.

Method

  1. Hard Boil the Eggs: Begin by placing the eggs in a single layer in a saucepan, covering them with an inch of water. Bring it to a boil before removing from heat and covering with a lid, letting them stand for 12 minutes. Once done, drain the water and cool them under cold running water until they're easy to handle.
  2. Prepare Egg Filling: Peel the cooled eggs carefully and slice them in half lengthwise, removing the yolks into a mixing bowl. Mash the yolks using a fork, then blend them with mayonnaise, Dijon mustard, hot sauce, smoked paprika, cayenne pepper, oregano, garlic powder, onion powder, and optional sugar until smooth and creamy.
  3. Spice Up Your Shrimp: In another small bowl, combine the remaining spices—smoked paprika, cayenne pepper, oregano, garlic powder, and onion powder. Pat dry your shrimp with paper towels before tossing them in this spice mixture to ensure they’re fully coated for maximum flavor when cooked.
  4. Cook the Shrimp: Heat olive oil in a skillet over medium-high heat until shimmering but not smoking. Place the seasoned shrimp in a single layer in the skillet and sear each side for about two minutes until they're slightly blackened but cooked through—transferring them onto a plate once done.
  5. Assemble Your Deviled Eggs: Take your chilled egg yolk mixture from earlier and pipe or spoon it generously into each egg white half. Top each filled egg with a perfectly seared shrimp along with thin slices of jalapeño and sprinkle chopped chives for added color.
  6. Serve & Enjoy!: Arrange your beautifully crafted deviled eggs on a platter ready for serving immediately alongside lemon wedges that guests can squeeze over their eggs before indulging in this flavorful treat!
