  • 1/4 cup hot honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or grease it lightly.
  3. In a mixing bowl, whisk together hot honey, garlic, soy sauce, olive oil, salt, black pepper, paprika, and crushed red pepper flakes.
  4. Coat the chicken thighs in half of the marinade and let them marinate for at least 10 minutes.
  5. Place sliced zucchini on the baking sheet; drizzle with remaining marinade and toss to coat.
  6. Arrange marinated chicken thighs skin-side up on the baking sheet next to the zucchini.
  7. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and zucchini is tender.

  9. Let rest before garnishing with chopped parsley.
