Ingredients

Scale
  • 12 egg whites (at room temperature)
  • 1¼ cups cake flour
  • 1¼ cups caster sugar
  • ¼ teaspoon salt
  • 1 teaspoon cream of tartar
  • 3 vanilla beans (seeds only)
  • 6 ounces fresh raspberries

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Lightly spray a bundt pan with cooking spray.
  3. In a bowl, sift together flour, ½ cup sugar, and salt three times.
  4. In a stand mixer, beat egg whites until frothy; gradually add cream of tartar and vanilla seeds until soft peaks form. Slowly incorporate remaining sugar.
  5. Gently fold in the sifted flour mixture in three additions without deflating the egg whites.
  6. Pour half the batter into the pan, layer raspberries, then top with remaining batter.
  7. Bake for 35-40 minutes until golden and springy to touch. Cool upside down for best results.
