Ingredients

Scale
  • 4 cups diced Yukon Gold or red potatoes
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 12 oz andouille sausage, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream or half and half
  • 2 tablespoons butter
  • 2 tablespoons Cajun seasoning

Instructions

  1. Prepare the vegetables by dicing the potatoes and chopping the onions, bell peppers, and celery.
  2. In a large pot, heat butter and olive oil over medium heat. Sauté the sliced andouille sausage until browned; set aside.
  3. Add onions, celery, and bell peppers to the pot; cook until softened (about 5–7 minutes). Stir in garlic for an additional 30 seconds.
  4. Return the sausage to the pot along with Cajun seasoning, diced potatoes, and chicken broth. Bring to a boil, then reduce to a simmer until potatoes are tender (15–20 minutes).
  5. Use an immersion blender to puree part of the soup while leaving some chunks for texture. Stir in heavy cream gently without boiling.
