Ingredients

Scale
  • 8 oz cooked shredded chicken breast
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onions
  • 1 jalapeño pepper, diced
  • 3/4 tsp ground cumin
  • 3/4 tsp chili powder
  • 1 cup shredded Monterey Jack cheese
  • Egg roll wrappers
  • Oil for frying
  • 1/2 cup ranch dressing
  • 1 medium ripe avocado, mashed
  • 2 tablespoons buttermilk
  • 2 tablespoons chopped fresh cilantro
  • 1 ½ teaspoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. In a mixing bowl, combine chicken, black beans, corn, red bell pepper, green onions, jalapeño, cumin, chili powder, and cheese; mix until well blended.
  2. Place an egg roll wrapper on a flat surface. Spoon 2-3 tablespoons of the filling in the center. Fold the bottom corner over the filling tightly and then fold in the sides before rolling up to seal.
  3. Heat oil in a frying pan over medium-high heat until hot. Fry egg rolls in batches until golden brown on all sides (about 3-5 minutes per side). Drain on paper towels.
  4. For the avocado ranch dip, mix ranch dressing with mashed avocado, buttermilk, cilantro, lime juice, salt, garlic powder, and onion powder until smooth.
  5. Serve warm with avocado ranch dip.
